Food additive

A food additive is a substance added to food to improve its keeping quality, safety, taste or appearance. Malay: bahan tambah makanan · Chinese: 食品添加剂.

Additives are not the food itself; they are extra substances mixed in for a purpose. The syllabus groups them by the job they do. Preservatives slow the growth of microbes so food lasts longer; antioxidants slow oxidation so fats do not turn rancid and cut fruit does not brown; flavour enhancers strengthen taste; colourings restore or add colour so food looks attractive; and stabilisers keep a mixture uniform and give it the right texture. Learning the group name together with the job it does is the key to answering questions on this topic.

Example. A bottle of chilli sauce may contain a preservative to stop it spoiling, a colouring to keep it bright red, a flavour enhancer to sharpen the taste, and a stabiliser to stop it separating. Each additive is present for a different, specific reason, and the label usually lists them by type.

Confusion to avoid. Do not treat all additives as the same or assume they are all harmful. Each type has its own purpose, and mixing them up, for example calling an antioxidant a preservative, loses marks. The correct match is: preservative against microbes, antioxidant against oxidation, and so on.

Food additives form one of the main sections of this chapter, and questions usually ask you to name the type of additive and state its function, so learning the pair together is exactly what SPM Chemistry rewards. Our teachers often set a quick table of type against function to lock this in. A common exam trap is to describe an effect and expect you to name the correct additive: “keeps cut apples from browning” points to an antioxidant, “stops the sauce from separating” points to a stabiliser, and “stops mould growing” points to a preservative. Practising in this direction, from function back to type, prepares you for the way the question is usually asked.
