Food additives are substances added to food to preserve it or to improve its taste, appearance or texture. The main types are preservatives, antioxidants, flavourings, colourings, stabilisers/thickeners and sweeteners.
Each has a function and an example, and each must be used within safe limits because excessive amounts can harm health.
This page covers one Form 5 content standard from the Consumer and Industrial Chemistry chapter: food additives. The exam expects you to define a food additive, to know the main types with their function and one example each, and to discuss the benefits and the possible harmful effects of using them. This is a recall-and-reasoning standard: know the categories cold, and be able to argue both sides.
What a food additive is
A food additive is a substance added to food in small amounts to preserve it or to improve its taste, appearance, texture or nutritional value. Additives may be natural (for example vinegar, salt, sugar or vitamin C) or synthetic (for example tartrazine or monosodium glutamate). The exam usually asks you to sort named substances into the correct type and to state what each type does.
The main types of food additive
Learn each type as function + one example:
- Preservatives, prevent food from spoiling by stopping the growth of microorganisms (bacteria, fungi, moulds). Examples: sodium benzoate, sodium nitrite, and the traditional preservatives salt, sugar and vinegar (ethanoic acid).
- Antioxidants, prevent oxidation, so they stop fats and oils turning rancid and stop cut fruit from browning. Examples: ascorbic acid (vitamin C), BHA and BHT.
- Flavourings and flavour enhancers, improve or intensify the taste of food. Examples: monosodium glutamate (MSG) as an enhancer, and esters as artificial fruit flavours.
- Colourings (dyes), improve the colour and appearance of food so it looks more attractive. Examples: natural colourings such as caramel and carotene, and synthetic ones such as tartrazine.
- Stabilisers, thickeners and emulsifiers, improve the texture and consistency and stop ingredients separating. Examples: gelatin, pectin, lecithin (an emulsifier) and gum acacia.
- Sweeteners, provide sweetness, often with few or no calories as a sugar substitute. Examples: aspartame, saccharin and sorbitol.
Why additives are used
Additives bring real benefits. Preservatives and antioxidants extend shelf life and reduce food waste, and preservatives such as sodium nitrite help prevent food poisoning from dangerous bacteria. Flavourings, colourings and stabilisers make food more appealing and consistent, and sweeteners let people enjoy sweet foods while reducing sugar intake. Some additives, such as vitamin C, also improve nutritional value.
Possible harmful effects
Additives must be used within safe limits set by the food authorities, because excessive use can be harmful. Some people are allergic or sensitive to certain colourings and preservatives. Very high intakes of some preservatives are undesirable, and over-reliance on sweeteners or flavour enhancers can encourage poor eating habits. The balanced exam conclusion is that additives are safe and useful when used correctly and in permitted amounts, but should not be used excessively, avoid saying simply that “additives are poison”, which is not the marking-scheme view.
Worked example
Question. A 500 cm3 bottle of fruit cordial contains the preservative sodium benzoate at a concentration of 0.80 g dm−3. (a) State the function of sodium benzoate in the cordial. (b) Calculate the mass of sodium benzoate in one full bottle.
Step 1, State the function. Sodium benzoate is a preservative; it prevents spoilage by stopping the growth of microorganisms, so the cordial lasts longer.
Step 2, Convert the volume to dm3. 500 cm3 ÷ 1000 = 0.500 dm3.
Step 3, Multiply concentration by volume. Mass = concentration × volume = 0.80 g dm−3 × 0.500 dm3 = 0.40 g.
Answer. (a) It acts as a preservative, preventing the growth of microorganisms. (b) The bottle contains 0.40 g of sodium benzoate.
Practice question
Question. The label on a packet of biscuits lists these additives: sodium benzoate, ascorbic acid, tartrazine and lecithin. (a) State the type and function of each additive. (b) Give one benefit and one possible disadvantage of adding additives to food.
Answer. (a) Sodium benzoate is a preservative, it prevents the growth of microorganisms so the biscuits keep longer. Ascorbic acid (vitamin C) is an antioxidant, it prevents oxidation so fats do not turn rancid (and it adds nutritional value). Tartrazine is a colouring (dye), it improves the colour and appearance. Lecithin is a stabiliser/emulsifier, it improves texture and stops ingredients separating. (b) Benefit: additives extend shelf life, reduce food waste and make food more appealing. Disadvantage: excessive amounts, or additives to which a person is sensitive, may cause allergic reactions or other harm, so they must be kept within safe limits.
Exam tip
For every additive, give the type, the function and, where asked, an example, a name on its own rarely scores. Keep the functions distinct: preservative = stops microorganisms; antioxidant = stops oxidation/rancidity; stabiliser/emulsifier = improves texture and stops separation. When a question asks about the effects of additives, always give a balanced answer, a benefit and a risk, and finish with the idea that additives are safe when used within permitted limits. Do not invent numbers for those limits; describe them in words.
